5 ISLI students participate to the Wine & Hospitality Management Workshop of the ARWHM

The ARWHM (Alliance for Research on Wine & Hospitality Management) serves as a vehicle for advancing rigorous academic research on wine and hospitality management issues. As part of its mission to foster first-rate research and build a community of scholars in the field of Wine & Hospitality Management, the ARWH organizes every year during the Spring season a Workshop to bring together scholars interested in the discipline. The inaugural workshop was held in 2017 in Bordeaux (France), hosted by KEDGE Business School. The second edition will be held by Ecole Hôtelière de Lausanne in May 2018. The conference rotates annually among ARWHM members.

5 ISLI students coming from Columbia, India, Turkey and France with diverse backgrounds in engineering and business have constituted the Eurest Mission Team .

In their mission’s project, the goal is to develop a model that can be used to improve the demand forecasting for the restaurant on the Bordeaux’s campus. The current forecasting is only based on qualitative measures, which means that there is a significant gap between the estimated and the actual number of customers served everyday. So thanks to various forecasting methods they improved their purchase process, they are now in the process of developing a model based on different tools that predicts the sales with more accuracy. This can help the Eurest Restaurant to make better purchasing and service decisions while reducing waste.
